Ian is one of Australia’s first class chefs. He’s famous for generous and unpretentious food, focusing on the quality of the produce, keeping it simple and fresh, which aligns perfectly with our own philosophy.

Ian is Executive Chef of the European group in Melbourne, where Pure Gold Pineapples is widely featured throughout his menus, from breakfast right through to dinner in the European and City Wine shop, fruit cocktails in the iconic Supper Club and Siglo Bars, cold pressed juice at Spring Street Grocer, Kirks Wine Bar and the newly opened French Saloon. Ian also consults to Craig’s Royal Hotel in Ballarat where he has introduced them to the famous Curley pineapple tarte tatin and bombe Alaska and also features it in his fruit based desserts at Caulfield Race Course, where he also consults to.
